Rachel - Sorry they didn't turn out! Cakes made from scratch should be just as moist as the box mixes, but they're also more finicky, which means it's easier to end up with a dry cake if one tiny thing is different. It could be any of several reasons, like altitude, or how the flour was measured, or what kind of pan they were baked in. You could try adding an extra 3-4 tablespoons of oil. And make sure the flour is fluffed up instead of packed down when you measure it. If you live at high altitude, try adjusting the oven temp 15 degrees higher, and take the cupcakes out of the oven a little early. Just a few ideas. Sorry for the novel. :) Happy baking!

I have a question. I usually just use a box cake mix but made these for the first time. They seemed a little dry. Is that typical for homemade cupcakes or is there something i need to try and do differently? ex; a little less flour or something?

It's really hard to keep our dishes on hold from our families 'til we have our photographs! But mine are so used to it now, they just laugh.

Your photos of this divine cupcake are great, thanks for taking time to show us, sorry you were late! :)

I think I've found a treat to make for my grandpa. He loves anything peanut butter and I'm sure he hasn't had peanut butter frosting before. I didn't realize you were still doing your food blog because it wasn't updating on my blog roll. I'm excited you are!

Hi there, thanks for the sweet comment on my site!
I share your sentiment when it comes to photographing your baked goods. Sometimes I'd just rather sit down with a fork and devour it than spend the time to get the perfect lighting in the perfect shot. But I guess that's why we blog, don't we? ;)
